«Pain Paillasse® Original» is a traditional bread made of selected wheat flour produced nearby you, natural leaven, hydrated with pure water, with a typical elongated shape and twisted on itself. It has a characteristic manufacturing with a long fermentation of the dough, before a division followed by a hand shaping. Once the dough is elaborately worked by the Baker’s hands, it is ready for cooking. The shaped dough is ideally placed in an oven firewood. Our breads are baked until caramelised crust, thick and crispy is formed and that the crumb has reached its perfect honeycombed texture.
